TEKKA-MAKI

Sashimi grade (ahi) red tuna seasoned with Wasabi, surrounded by seasoned rice and wrapped in nori (seaweed). Tekka-Maki got its name from the gambling casinos known as Tekka-Jo, where rolIed sushi was served because it was easy to eat while gambling. Tekka-Maki are hlgh in protein and iron, and the seaweed used to wrap the tuna is also high in vitamins and minerals.

FRESH GREEN PEA SOUP WITH BASIL

Blanched, pureed and cooked green peas in cream with sautéed ginger-garlic-onion paste and basil.
